Tap on the settings icon. Select General, International, Keyboards. Tap Edit in the upper right corner.

To change just tap on the new keyboard.

If you want to remove a keyboard just tap on the red circle with a white line in front of that keyboard name. Tap on delete to remove that keyboard from your iPad.
